Light whites and rosé keep 3–5 days (some up to a week) sealed in the fridge; richer, oaked whites like Chardonnay oxidize a bit faster. Always re-cork and refrigerate.

Crisp whites like Sauvignon Blanc and Pinot Grigio shine cold, around 45–50°F; fuller whites like oaked Chardonnay show more character slightly warmer, 50–55°F. Over-chilling mutes flavor, so pull it out a few minutes before pouring.

Dry whites (Sauvignon Blanc, most Chardonnay, Pinot Grigio) have little residual sugar and taste crisp; sweeter whites (Moscato, Riesling) keep more sugar for a fruity, off-dry finish. If you like a softer, fruitier glass, start sweet.
