Port questions

What is Port wine?
A fortified sweet wine from the Douro Valley in Portugal. Grape spirit is added during fermentation, which halts it early — leaving natural sweetness and pushing alcohol to around 20%.
What's the difference between Ruby, Tawny and Vintage Port?
Ruby is young, fruity and bold. Tawny ages in barrel and turns nutty and caramelized, often with an age statement like 10 or 20 years. Vintage Port comes from a single exceptional harvest and ages for decades.
How long does Port last after opening?
Much longer than table wine, thanks to the alcohol and sugar. Ruby keeps a few weeks refrigerated; Tawny can last a month or two. Vintage Port, once opened, should be finished within a few days.
What do you serve with Port?
Blue cheese, especially Stilton, is the classic pairing. It's also excellent with dark chocolate, walnuts, and dried fruit after dinner.
