What is sherry?
A fortified wine from Jerez in southern Spain, made from white grapes and aged in a solera system that blends older and younger wine together. Styles run from bone-dry to intensely sweet.
What's the difference between fino, amontillado and oloroso?
Fino is lightest and driest, aged under a protective layer of yeast. Amontillado starts as fino then oxidizes, turning nuttier and deeper. Oloroso is oxidative from the start — fuller, richer, darker.
Is sherry sweet?
It depends entirely on the style, which is why sherry confuses people. Fino and manzanilla are bone-dry; cream sherry and Pedro Ximénez are dessert-sweet.
