Champagne

It must come from the Champagne region of France and be made in the traditional method, with the second fermentation happening in the bottle. Sparkling wine made the same way elsewhere goes by other names — Cava in Spain, Crémant elsewhere in France.

Blanc de Blancs is made entirely from white grapes (Chardonnay) — lighter, crisper, more citrus. Blanc de Noirs is made from black grapes (Pinot Noir, Pinot Meunier) — richer and fuller-bodied.

Non-vintage blends multiple years for a consistent house style and is what most Champagne is. Vintage Champagne comes from a single exceptional harvest, ages longer, and costs considerably more.

About 1 to 3 days in the fridge with a proper sparkling stopper. Traditional-method bubbles hold slightly longer than Prosecco's, but it's still best the day you open it.
