The Sparkling Spectrum

  • Prosecco (Italy) — light, fruity, soft bubbles. The brunch and aperitivo go-to. $12–$25.
  • Cava (Spain) — méthode champenoise, drier and more mineral than Prosecco. $12–$30.
  • Crémant (Loire, Burgundy, Alsace) — same method as Champagne, made outside the AOC. The connoisseur's value play. $20–$35.
  • California sparkling (Chandon, Roederer Estate, Schramsberg) — méthode champenoise, often by Champagne houses themselves. $20–$60.
  • Champagne — the gold standard. Toasty, complex, age-worthy. $50–$300+.
  • Lambrusco — sparkling red from Emilia-Romagna. Underrated with cured meats and pizza.

Serving Notes

Serve at 40–45°F (about 30 min in the fridge, or 15 min in an ice bucket). Use flutes for retention of bubbles, white wine glasses if you want more aroma. Open by twisting the bottle (not the cork) — quieter, safer, and you keep more of the carbonation.
