Paper Plane Recipe cocktail in glass with garnish

Paper Plane Recipe: The Modern Bourbon Classic

The Paper Plane is a mid-2000s modern classic—credited to Sam Ross—celebrated for its elegant equal-parts formula that balances bourbon, bitter orange liqueur, amaro, and fresh lemon. Its strength lies in precise proportions and bright, fresh citrus; a great version tastes harmonized rather than dominated by any one element. Use a quality bourbon with caramel and stone-fruit notes and the traditional Amaro Nonino when possible, though similar amari can work in a pinch. One practical tip: always use fresh lemon and a vigorous shake, and if you’re shopping for whiskey at our Buffalo location, ask for recommendations with those flavor characteristics.

Ingredients

¾ oz bourbon
¾ oz Aperol
¾ oz Amaro Nonino
¾ oz fresh lemon juice

Instructions

  1. Chill a coupe glass by placing it in the freezer or filling it with ice water while you prepare the cocktail.
  2. Add bourbon, Aperol, Amaro Nonino, and fresh lemon juice to a shaker.
  3. Fill the shaker with ice and shake vigorously for about 12 to 15 seconds until well chilled and slightly diluted.
  4. Double strain into the chilled coupe to remove ice shards and any pulp.
  5. Serve straight up without garnish.
Garnish: No garnish
💡 Pro tips: Use freshly squeezed lemon juice and measure precisely to preserve the paper plane's signature balance of bitter, sweet, and bright; canned juice flattens the profile. Shake long enough to integrate and chill but not so long that the drink goes watery; a hard 12–15 second shake is ideal. If you prefer a slightly rounder finish, swap Amaro Nonino for Amaro Montenegro and reduce Aperol by 0.125 oz.
