The Paloma is Mexico’s most ubiquitous tequila highball, born in cantinas where simple ingredients—tequila and grapefruit soda—came together for an effortless, refreshing drink. What makes an exceptional Paloma is bright, fresh citrus, a good blanco tequila, and the right balance of salt and sweetness to accent the grapefruit rather than overpower it. Classic versions use grapefruit soda like Jarritos or Fresca for convenience, while bartenders often prefer a mix of fresh grapefruit juice and soda for more complexity. One practical tip is to keep all ingredients chilled and assemble over ice to preserve carbonation; if you’re in Buffalo, our store stocks quality blancos suited to this cocktail.
Ingredients
| 2 oz | blanco tequila |
| ½ oz | fresh lime juice |
| ¼ oz | simple syrup (optional) |
| 4 oz | grapefruit soda (Jarritos, Fresca or similar) |
| 1 cup | ice |
| ¼ tsp | coarse salt for rim |
| 1 oz | grapefruit wedge for garnish |
Instructions
- Rub a lime wedge around the rim of a highball glass and dip the rim into coarse salt to coat.
- Fill the glass with ice to chill thoroughly.
- Add the tequila, fresh lime juice, and simple syrup into the glass over the ice.
- Top gently with grapefruit soda, pouring down the side to preserve carbonation.
- Stir once or twice with a bar spoon to integrate without flattening the soda.
- Garnish with a grapefruit wedge and serve immediately.
