Build the drink

Method

    Fill a chilled highball glass with plenty of fresh ice.

    Pour 4 oz of ginger beer into the glass.

    Slowly float 2 oz of dark rum over the ginger beer by pouring it gently over the back of a spoon.

    Garnish the rim with a lime wedge and skewer a piece of candied ginger on the glass.

    Serve with a long stirrer and advise the guest to stir gently to combine before sipping.
