Ingredients
| 2 oz | Dark rum (traditionally Gosling's Black Seal) |
| 4 oz | Ginger beer (fiery, non-alcoholic) |
| 1 tsp | Lime wedge (for garnish) |
| 1 tsp | Candied ginger (for garnish) |
Instructions
- Fill a chilled highball glass with plenty of fresh ice.
- Pour 4 oz of ginger beer into the glass.
- Slowly float 2 oz of dark rum over the ginger beer by pouring it gently over the back of a spoon.
- Garnish the rim with a lime wedge and skewer a piece of candied ginger on the glass.
- Serve with a long stirrer and advise the guest to stir gently to combine before sipping.
