The Caipirinha is Brazil's national cocktail, born from simple peasant ingredients—cachaça, sugar and lime—and celebrated for its bright, rustic character. A great Caipirinha balances the grassy, slightly vegetal notes of good cachaça with the tartness of fresh lime and the soft, dissolving sweetness of sugar, all tempered by crushed ice; technique matters more than bells and whistles. When shopping for cachaça seek recent vintages with clean sugarcane notes—many specialty shops in Buffalo carry respectable bottles—or ask our store for recommendations. One practical tip: use superfine sugar or a small amount of simple syrup for a more consistent dissolve and smoother texture.
Ingredients
| 2 oz | cachaça (Brazilian sugarcane spirit) |
| 1 oz | lime (cut into 8 wedges; typically half a lime) |
| 2 tsp | granulated sugar (or superfine) |
| 1 cup | crushed ice |
| 1 tbsp | lime wheel (for garnish) |
Instructions
- Place the lime wedges and granulated sugar in a chilled rocks glass.
- Muddle firmly to release the lime oils and juice and to dissolve the sugar, avoiding crushing the bitter pith and seeds.
- Add the cachaça, fill the glass with crushed ice, and cap with a little more ice to the top.
- Stir briskly for about 10–15 seconds to chill and achieve slight dilution.
- Garnish with a lime wheel, insert a short straw, and serve immediately in the rocks glass.
