Gin
Gin Style Guide & Staff Picks
The Gin Styles
- London Dry — juniper-forward, dry, classic. Tanqueray, Beefeater, Bombay Sapphire, Sipsmith, Fords.
- Plymouth — softer, slightly sweeter than London Dry. Plymouth Gin (the only producer).
- Contemporary / New Western — juniper present but other botanicals lead. Hendrick's (cucumber/rose), Aviation (lavender), Monkey 47, The Botanist.
- Old Tom — slightly sweeter, malted, the historical gin of pre-Prohibition cocktails. Hayman's, Ransom.
- Genever — the Dutch ancestor of gin. Bols.

Cocktails Worth Making
Gin & Tonic (1:3 with Fever-Tree tonic, lemon or grapefruit peel), Negroni (equal parts gin, Campari, sweet vermouth), Martini (2.5 oz gin, ½ oz dry vermouth, stirred), Aviation, Last Word (gin + Chartreuse + Maraschino + lime), French 75 (gin + lemon + sugar + Champagne).
The G&T Done Right
Most G&Ts fail because of cheap tonic, not cheap gin. Use Fever-Tree, Q, or East Imperial. Big ice cube, never crushed. Garnish to match the gin: cucumber for Hendrick's, lemon for Tanqueray, grapefruit for Tanqueray No. Ten, juniper berry + bay leaf for Sipsmith.
